Cannabis cookies: the short answer

Cannabis cookies are baked goods that contain cannabinoids, with THC, CBD, or both. The cannabinoids reach the dough through cannabutter, infused oil, or distillate. Oral cannabinoids absorb through the gut and liver. Onset runs 30 to 120 minutes. Peak effects arrive at 2 to 4 hours. Effects last 6 to 8 hours. Retail THC edibles in Colorado are capped at 10 mg per serving and 100 mg per package. Hemp CBD cookies sit in a different zone: the FDA has not approved CBD as a food ingredient.

THC cookies compared with CBD cookies

THC binds CB1 receptors in the brain. That produces intoxication, altered time sense, dry mouth, and impaired coordination. CBD binds CB1 receptors with low affinity. It does not produce a high. One cookie can hold both. A 10 mg THC cookie with 25 mg CBD is a common ratio in state-licensed markets. Hemp-derived CBD cookies sold online are limited to 0.3% THC by dry weight under federal law.

How cannabinoids get into the dough

Three methods cover most kitchens and commercial bakeries.

  • Cannabutter. Ground flower is heated to turn THCA into THC, then simmered in butter. THCA needs heat to become active. A home oven at 240 degrees F for 30 to 40 minutes does this. Conversion is not complete.
  • Infused oil. Coconut oil and olive oil hold cannabinoids. Oil doughs bake at lower heat and lose less.
  • Distillate. Distillate is active before baking. Bakers stir it into dough, frosting, or filling after the bake. Heat degrades it.

Bake temperature and loss

Cookie recipes call for 350 degrees F. Published boiling points put THC near 315 degrees F and CBD near 320 to 356 degrees F. A 10 to 12 minute bake at 350 degrees F drives off part of the cannabinoid load. Frosting and post-bake dosing avoid the loss. Fat and sugar in the dough slow the breakdown.

Dose math for a home batch

Start with flower potency. One gram of flower at 20% THC holds 200 mg of THC. Decarboxylation and infusion recover part of that. Estimate 60% to 90% in a home kitchen. At 80%, 1 gram gives 160 mg in the butter. Cut the dough into 16 cookies and each cookie holds about 10 mg. Cut it into 8 and each holds 20 mg. Weigh the dough, divide by the number of cookies, and write the number on the lid.

Onset and duration

  • 0 to 30 minutes: little to no effect.
  • 30 to 120 minutes: onset.
  • 2 to 4 hours: peak.
  • 6 to 8 hours: taper. Some users report effects past 10 hours.

Label checks

Licensed products list mg THC and mg CBD per serving and per package. Ask for a certificate of analysis. A COA from an ISO 17025 lab reports potency plus pesticides, heavy metals, residual solvents, yeast, and mold. For hemp CBD, check that the COA batch number matches the package. The FDA has warned companies about claims that CBD treats disease. Epidiolex is the only CBD drug the FDA has approved.

Storage and safety

Butter cookies keep 1 to 2 weeks in an airtight container at room temperature. Freeze them up to 6 months. Fats go rancid over time. Label the container with the dose per cookie.
